About Extra virgin olive oil
Extra virgin olive oil is made by pressing olive oil, without heat or chemicals; it’s known as the first cold pressed olive oil. Acidity must be below 0.8% or virtually free of acidity. This has nothing to do with the pH or taste, but the % of oleic acid (fatty acid). Higher levels indicate improper production and rancidity. A panel of expert tasters trained by the International Oil Council test for taste defects and the presence of positive attributes of fruitiness, bitterness and spiciness. If the oil doesn’t have the signature fruity taste and harmonious balance it won’t pass as extra virgin. Extra virgin olive oil has a high smoking point of 400°F, so it is great for cooking and baking. You will want to store your oil somewhere dark and cool, not on the counter or near a stove, and never in the refrigerator.

Simple Spinach & Tomato Spaghetti
- 16 oz. spaghetti ( You can use linguine, or fettuccini)
- 3 cloves garlic, minced
- Salt and freshly ground pepper
- 6 Tbs extra virgin olive oil
- 2 cup of spinach
- 1 cup of diced cherry tomatoes
- ¼ tsp crushed red pepper
- Juice of 1 lemon
- Cook pasta according to the package instructions.
- In a pan heat up cherry tomatoes, garlic and extra virgin olive oil and sauté on low, Add in spinach
- Drain pasta, saving ¼ cup of the cooking liquid for later use.
- Return pasta to the pan. Add the spinach and tomatoes mixture and half of the reserved cooking liquid. Toss to combine. Add salt and pepper, red peer and lemon to taste.
