Did someone say brunch? Oh wait, I did! 🙂 My family and I love brunch and it is the best thing ever. We love going to brunch and we also love making it at home. The brunch possibilities are endless, and that is part of what makes this meal so amazing. I have a delicious brunch recipe to share with you!
Sausage Egg & Cheese Breakfast Scramble is an easy, tasty, crowd pleasing dish. It is a cinch to make, and very easy to duplicate as needed. We love this dish by itself, served on toast, or as a side dish to your brunch festivities. Ingredients
1 lb of breakfast sausage
1 dozen Nellie’s Free Range Eggs
1 green or red pepper diced
1 tablespoon of milk
1 teaspoon of salt
1/2 teaspoon of pepper
2 cups of shredded Cabot Creamery cheese (cheddar or pepper jack is what we like)
1 bunch Green onions for garnish
Directions
Cook and crumble the sausage and the peppers in a large skillet until cooked thoroughly. Do not drain the fat, as this is part of the magic. Once sausage is cooked, reduce heat to medium and set sausage to the side. Make sure you have enough room to cook and scramble your eggs. Combine eggs, milk, salt, and pepper; mix thoroughly; pour into the skillet. Once the eggs are almost done add 1 cup of cheese. Once finished top with another cup of cheese and green onions. Serve and enjoy! Feel free to change out the meat or cheese for different variations.
One thing we like to do is make egg burritos, but instead of tortillas we use pancakes. We just add about 50% more liquid to the pancakes to make them thinner. The key is to butter the pan well before each pancake so they flip easily. The extra buttery pancake is delicious all by itself, but then you add the cheesy egg and sausage mixture!!
