September is National Breakfast month, and we all know how important a good breakfast can be! As a busy mom of three, breakfast is one of our busier times, but I still take the time each morning to ensure my kids get a healthy start to their day!
Why is breakfast so important? Eating within 2 hours of waking can make a difference in the way you metabolize glucose, or blood sugar, all day. Your glucose level rises every time you eat, and your pancreas produces insulin to shuttle the glucose into your cells, where it’s used for energy. Research is finding that keeping glucose and insulin in the right balance has important effects on metabolism and health. What all that means is to truly start your day off right and to get your body doing what it is suppose to, you need a well balanced breakfast!
What makes for a good breakfast? Eggs! I love eggs. They are so easy to prepare and there are endless ways to prepare them! I recently tried Pete and Gerry’s Humane Free Range Organic Eggs, and loved them. Organic free range eggs mean no antibiotics, pesticides, or GMOs.
The “USDA Certified Organic” seal on their label is your guarantee that:
Their hens are never caged, and all their barns allow them access to the outdoors. Their animal welfare standards go even farther than the Organic seal requires!
They never administer antibiotics or hormones to our hens.
Their hens’ 100% organic feed contains no pesticides, herbicides, fungicides, or GMOs.
It’s also free of animal by-products (and the drug residues/pathogens that may be associated with them). No slaughterhouse waste allowed!
Their farms are inspected at least once a year by a third-party certifier with USDA accreditation.
They are also very affordalble. With Pete and Gerry’s Humane Free Range Organic Eggs, you’re providing the best quality eggs to your family. Here are a few of my favorite ways to do breakfast with eggs…
My Top 3 Egg Centered Breakfasts
Make ahead scrambled egg cups. This is an easy recipe to double, freeze, and prepare ahead of time. I pair these with fresh fruit and orange juice… an easy breakfast ready in minutes! Get the printable recipe below.
Classic eggs, toast and sausage. I love Applegate frozen breakfast sausage. These are all natural, organic, and delicious. It takes minutes to scramble eggs. You can add some protein on the toast with almond butter!
Last, but not least, quiche! This is a great way to add some veggies to your breakfast. This does take a little extra time to chop and cook veggies, but I usually make 2 and bake the night before. Quiche is filling and easy to heat up the next morning. Get the printable recipe below.
